Happy & Healthy Eating For kids

Everyone loves a delicious snack, don’t they? Everyone has at some time had the enthusiasm to try cooking something… no matter how bad it ended up. As kids, didn’t you ever try helping your parents cook? I’m sure you did and am sure that your kids do too. So, make your kids happy with these few easy and fun dishes that you can cook with your kids and stack up a few happy memories that’ll last the ages.

Apple racecars

These are tiny packets of nutrients that’ll help keep your kid zooming and full of energy all day long.

Ingredients:

• 4 Jazz apples
• 16 green grapes, cut in half
• You will also need:16 toothpicks

Method:

• Gather all ingredients. Cut two full cheeks from each apple. Slice out the centre third so you have a wedge.
• Slip 2 toothpicks into each apple wedge to become the car axles. Place grape halves on each side of the toothpick for wheels. Vroom vroom!

2 Ingredient Ice-cream

Everybody loves ice-cream no exceptions, so here’s a perfect treat to eat with your kids while chilling.

Ingredients:

• 600ml (2 1/2 cups) pouring cream
• 1 tin (395g) sweetened condensed milk

Method:

• Gather ingredients.
• In a bowl, using a mixer, whip the cream until it is very stiff. Fold in the condensed milk.
• Add in preferred flavours or nuts. Place in an airtight container freezing for 6-8 hours before serving.

Jam drop biscuits

A crunchy jammy treat that’s so addicting that you can’t stop at one.

Ingredients:

• 175 g Western Star Unsalted Butter (softened)
• 1 tsp vanilla extract
• 1/4 cup CSR Soft Icing Mixture (sifted)
• 1 cup plain flour (sifted)
• 1/4 cup cornflour
• 1/4 cup raspberry jam

Method:

1. Preheat the oven to 180°C and line two baking trays with baking paper.
2. Beat the butter, vanilla and icing sugar in the bowl of an electric mixer on medium until pale and fluffy. Add the flour and cornflour, and mix for 30 seconds or until a dough forms. The mixture should be like play dough!
3. Lightly dust your hands with some extra flour, and then roll tablespoons of the mixture into balls. Place each onto the trays about 2cm apart and use your fingers to flatten slightly. Create a big thumbprint in the centre of the dough to create an indent, and then fill each with a small blob of jam (1⁄2 teaspoon).
4. Transfer the biscuits into the oven for 10 minutes or until they turn light golden on the edges and the jam is bubbling.
5. Once baked, allow the biscuits to cool on the baking trays for five minutes before transferring to a wire rack to cool completely.
